Today I am making Orange Roughy with a Citrus Sauce. Light, lower calorie, and it turned out pretty darn good. Especially considering I had no recipe at all. Didn't take three different recipes and smash them together, or pick the best from each. All from my fevered brain.
Orange Roughy used to be cheap, much like tilapia is today. Then it became hugely popular as an alternative to the usual mild whiute fleshed fish, and now it is $10.00 a pound.

Two fish in Smith Lake---one is cruising for food and the other is consuming it. The fish were busy this day. Just about every second the lake's surface was disturbed by a fish grabbing an insect. I shot several fish pictures but did not expect to get an open-mouth shot like this. These fish were about fifteen feet away. Smith Lake is in Nevada's East Humboldt Mountains, about 12 miles southwest of the city of Wells
